Refreshing Summer Drink Recipie From Eurest

​​​​Watermelon Mint Mocktail

Servings: 2 mocktails  | Calories per Serving: 35​

Ingredients:

4 each  fresh mint leaves (plus more for garnish)

  ice

1 ½ cups  watermelon juice (directions below)

1 cup  club soda

2 slices  watermelon (for garnish)



Preparation:

Make the watermelon juice by pureeing 3 cups cubed seedless watermelon in a blender until smooth. Pour the mixture through a fine-mesh sieve into a bowl, pressing with a spoon to release all the juices. Discard any remaining solids. (Note: the juice can be covered and refrigerated up to 4 days).

Place mint in cocktail glasses and mash the leaves using a muddler or a small wooden spoon. Fill each glass 1/3 with ice.  Add watermelon juice and top with club soda. Garnish each glass with mint leaves and a watermelon slice. Serve cold.
